  • 1 lb ground beef or turkey for a leaner option
  • 1 lb Velveeta cheese cubed for faster melting
  • 1 can Rotel diced tomatoes with green chilies (10 oz)

Seasonings & Extras

  • ½ tsp chili powder optional for extra flavor
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ cup milk for a smoother consistency
  • salt and pepper to taste
  • ½ cup shredded cheddar cheese optional for added richness

Instructions
 

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  • Stir in chili powder, garlic powder, onion powder, salt, and pepper. Mix well.
  • Lower the heat and add the Velveeta cubes and Rotel tomatoes. Stir continuously until the cheese is fully melted.
  • If the dip is too thick, add milk a little at a time until you reach the desired smoothness.
  • For extra cheesiness, stir in shredded cheddar cheese.
  • Serve warm with tortilla chips, pretzels, or fresh veggies.

Notes

To keep the dip warm, serve in a slow cooker on the 'warm' setting. Stir occasionally.
