  • 200 g fettuccine pasta or heart-shaped pasta
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 2 garlic cloves minced
  • 0.5 cup freshly grated Parmesan cheese
  • 0.25 tsp black pepper
  • sea salt to taste
  • cherry tomatoes halved
  • 1 tbsp chopped parsley for garnish
  • red pepper flakes optional, for a kick

Instructions
 

  • Cook pasta in salted boiling water until al dente. Reserve ¼ cup of pasta water, then drain and set pasta aside.
  • In a saucepan over low heat, melt butter. Sauté garlic for 30 seconds.
  • Add cream and bring to a gentle simmer. Gradually stir in Parmesan until smooth. If sauce thickens too much, add reserved pasta water.
  • Toss in the cooked pasta and cherry tomatoes, stir to coat evenly. Season with salt and pepper.
  • Plate and garnish with parsley and optional red pepper flakes. Serve warm with bread or salad.

Notes

For Valentine flair, add beet purée to sauce for a pink hue. Try dairy-free cream for a vegan variation. Heart-shaped ravioli makes a cute upgrade.
