Tahini Butter Cookies

Ingredients
  

Cookie Dough

  • 1 cup unsalted butter softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup tahini smooth and unsweetened
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking powder
  • sea salt optional, for sprinkling on top

Instructions
 

  • Preheat oven to 325°F (165°C) and line a baking tray with parchment paper.
  • Cream butter and sugar together in a large mixing bowl until light and fluffy (2–3 minutes).
  • Add vanilla and tahini, mixing until smooth and fully combined.
  • Sift together flour and baking powder, then gradually mix into wet ingredients until just combined.
  • Scoop tablespoon-sized portions onto baking tray, flatten slightly.
  • Bake for 14–16 minutes, until edges are golden. Let cool 10 minutes on tray before transferring.

Notes

Optional: Sprinkle with sea salt after baking. Store in airtight container for up to 5 days or freeze up to 2 months.
