Instructions
If using fresh cabbage, shred it finely using a knife or food processor. Otherwise, pour the coleslaw mix into a large bowl.
In a separate bowl, whisk together the salad dressing, vegetable oil, sugar, vinegar, salt, and poppy seeds (if using) until smooth and well combined.
Pour the dressing over the coleslaw mix and diced onion. Use a large spoon or tongs to toss everything together until evenly coated.
Cover the bowl and refrigerate for at least 1 hour (or overnight for the best flavor). This allows the flavors to meld together and the cabbage to soften slightly.
Give the slaw one last stir before serving. Enjoy it as a side dish, a burger topping, or even inside tacos for extra crunch!
Notes
For extra crunch, add chopped almonds, sunflower seeds, or crushed ramen noodles just before serving. For a lighter version, substitute half the mayo with Greek yogurt.
