Ingredients
  

Coleslaw Base

  • 16 oz coleslaw mix or freshly shredded cabbage and carrots
  • 2 tbsp diced onion

Dressing

  • cup creamy salad dressing Miracle Whip or mayonnaise
  • 3 tbsp vegetable oil
  • ½ cup white sugar adjust for sweetness preference
  • ¼ cup white vinegar can be replaced with apple cider vinegar
  • ½ tsp salt
  • ½ tsp poppy seeds optional, for added texture

Instructions
 

  • If using fresh cabbage, shred it finely using a knife or food processor. Otherwise, pour the coleslaw mix into a large bowl.
  • In a separate bowl, whisk together the salad dressing, vegetable oil, sugar, vinegar, salt, and poppy seeds (if using) until smooth and well combined.
  • Pour the dressing over the coleslaw mix and diced onion. Use a large spoon or tongs to toss everything together until evenly coated.
  • Cover the bowl and refrigerate for at least 1 hour (or overnight for the best flavor). This allows the flavors to meld together and the cabbage to soften slightly.
  • Give the slaw one last stir before serving. Enjoy it as a side dish, a burger topping, or even inside tacos for extra crunch!

Notes

For extra crunch, add chopped almonds, sunflower seeds, or crushed ramen noodles just before serving. For a lighter version, substitute half the mayo with Greek yogurt.
