Instructions
Heat the pastrami in a skillet or steam it lightly to retain moisture. Avoid overheating to keep it juicy.
Lightly toast the rye bread in a skillet with butter for extra crispiness, or toast it dry for a more traditional texture.
Spread deli-style mustard evenly on both slices of bread.
Layer the warm pastrami generously onto one slice of bread.
If using cheese, place it over the pastrami and let the heat melt it slightly. Add sauerkraut if desired.
Top with the second slice of bread, cut in half, and serve with pickles and coleslaw.
Notes
For a healthier twist, use whole-grain mustard and whole wheat rye bread. Serve with a side of pickles, coleslaw, or a warm bowl of matzo ball soup.
