4large flour tortillas10-inch size preferred
1cupnacho cheese sauce
0.5cupshredded lettuce
0.5cupsour creamor Greek yogurt
Instructions
Heat a large skillet over medium-high heat. Add olive oil and ground beef, breaking it apart as it cooks. Brown the meat for about 5–7 minutes.
Stir in taco seasoning and drained Rotel tomatoes. Mix well and let simmer for 3–5 minutes to blend the flavors.
Warm the tortillas in a dry skillet for 10–15 seconds per side or microwave them for 10 seconds to make folding easier.
Spread nacho cheese sauce onto each tortilla. Add a generous scoop of seasoned beef, then top with shredded lettuce and sour cream.
Fold in the sides, then roll the tortilla tightly from the bottom up. Slice in half and serve immediately.
