Ingredients
  

Base Ingredients

  • 2 large chicken breasts boneless, skinless
  • 8 oz pasta fettuccine, linguine, or cavatappi
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • ½ tsp black pepper to taste
  • 1 tsp Italian seasoning

Creamy Sauce

  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • ½ cup sundried tomatoes chopped
  • 1 cup heavy cream
  • ¾ cup Parmesan cheese grated
  • ½ cup chicken broth
  • fresh basil chopped, for garnish

Instructions
 

  • Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat.
  • Sear chicken for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
  • In the same skillet, sauté onions and garlic until fragrant, about 2 minutes. Add sundried tomatoes and stir.
  • Reduce heat and pour in heavy cream, Parmesan cheese, and chicken broth. Stir well and let simmer for 3-4 minutes.
  • Return chicken to the skillet, coat with sauce, and simmer for another 5 minutes until fully cooked.
  • Cook pasta according to package instructions until al dente. Drain and add to the skillet, tossing everything together.
  • Garnish with fresh basil and serve immediately.

Notes
