Homemade Alphabet Soup

Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small onion diced
  • 2 carrots diced
  • 1 celery stalk chopped
  • 1 potato potato cubed
  • 1 can diced tomatoes 14 oz
  • 4 cups vegetable or chicken broth
  • 1 tsp dried basil
  • 1 cup alphabet pasta
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add garlic, onion, carrots, celery, and potatoes. Sauté for 3–4 minutes until slightly softened.
  • Add the diced tomatoes, broth, basil, salt, and pepper. Bring to a boil.
  • Reduce heat and let the soup simmer for 15–20 minutes until the vegetables are tender.
  • Add the alphabet pasta and cook for another 7–8 minutes, stirring occasionally, until the pasta is al dente.
  • Adjust seasoning if needed, then serve hot and enjoy!

Notes

For extra protein, add shredded chicken or ground turkey. For a spicier version, sprinkle in red pepper flakes!
