Ingredients
  

Pasta Dough

  • 2 cups all-purpose flour or semolina flour for a firmer texture
  • 2 large eggs room temperature
  • 1 tbsp olive oil
  • ½ tsp salt

For Color Variations (Optional)

  • 2 tbsp beet puree for pink pasta
  • 2 tbsp spinach puree for green pasta

Instructions
 

  • In a mixing bowl, create a well in the center of the flour. Add eggs, olive oil, and salt. If using color variations, mix in beet or spinach puree.
  • Using a fork, slowly incorporate the flour into the wet ingredients until a dough forms.
  • Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
  • Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  • Roll out the dough to about 1/8 inch thickness using a rolling pin or pasta machine.
  • Use a heart-shaped cutter to cut out pasta shapes.
  • Bring a large pot of salted water to a boil. Cook heart-shaped pasta for 2-4 minutes until al dente.
  • Drain and toss with your favorite sauce before serving.
