Ingredients
  

Hashbrown Chaffle Batter

  • 2 cups shredded hash browns thawed if frozen
  • 2 eggs beaten
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium onion grated
  • 2 tbsp gluten-free all-purpose flour
  • ½ tsp salt to taste
  • ½ tsp black pepper to taste

For Cooking

  • butter or cooking spray for greasing the waffle iron

Instructions
 

  • Preheat your waffle iron according to the manufacturer's instructions. Lightly grease with butter or cooking spray to prevent sticking.
  • In a large mixing bowl, combine the shredded hash browns, beaten eggs, shredded cheddar and mozzarella cheeses, grated onion, gluten-free flour, salt, and black pepper. Mix until all ingredients are well incorporated.
  • Scoop a portion of the mixture onto the center of the preheated waffle iron, spreading it evenly. Close the lid and cook for 5-7 minutes, or until the chaffle is golden brown and crispy.
  • Carefully remove the chaffle from the waffle iron and place it on a wire rack to cool slightly. Repeat the process with the remaining batter.
  • Serve warm, optionally topped with your favorite toppings such as avocado slices, poached eggs, or salsa.

Notes

For a dairy-free version, substitute the cheeses with dairy-free alternatives. You can also add chopped vegetables like bell peppers or spinach to the batter for added flavor and nutrition.
