Ingredients
  

Granola Base

  • 2 cups rolled oats
  • ½ cup peanut butter or almond butter
  • cup honey or maple syrup for vegan option
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 pinch salt

Optional Fillings

  • Greek yogurt
  • fresh berries
  • peanut butter
  • banana slices
  • dark chocolate drizzle
  • chopped nuts

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with coconut oil or use silicone liners.
  • In a large bowl, mix the oats, cinnamon, and salt.
  • In another bowl, combine peanut butter, honey, melted coconut oil, and vanilla extract. Stir until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until fully combined.
  • Divide the mixture evenly into the muffin tin, pressing firmly into the bottom and up the sides to create a cup shape.
  • Bake for 12-15 minutes until golden brown. Let them cool completely before removing from the tin.
  • Fill each granola cup with your desired toppings such as yogurt, fruit, or nut butter.
  • Enjoy immediately or store for later use!

Notes

For a no-bake version, refrigerate the granola mixture for at least 2 hours instead of baking.
