Instructions
Preheat your oven to 350°F (175°C) and grease a muffin tin with coconut oil or use silicone liners.
In a large bowl, mix the oats, cinnamon, and salt.
In another bowl, combine peanut butter, honey, melted coconut oil, and vanilla extract. Stir until smooth.
Pour the wet ingredients into the dry ingredients and stir until fully combined.
Divide the mixture evenly into the muffin tin, pressing firmly into the bottom and up the sides to create a cup shape.
Bake for 12-15 minutes until golden brown. Let them cool completely before removing from the tin.
Fill each granola cup with your desired toppings such as yogurt, fruit, or nut butter.
Enjoy immediately or store for later use!
Notes
For a no-bake version, refrigerate the granola mixture for at least 2 hours instead of baking.
