Ingredients
  

Sushi Rice Base

  • 1 cup sushi rice or any short-grain sticky rice
  • 1 ¼ cup water
  • 2 tbsp sugar
  • ¼ tsp salt
  • ½ cup coconut milk optional for flavor
  • 1 tbsp vanilla extract

Toppings & Wrappers

  • assorted fruits e.g. strawberries, kiwi, mango, blueberries, bananas
  • rice paper or soy paper
  • shredded coconut, honey, dark chocolate, chia seeds optional toppings

Instructions
 

  • Rinse the rice thoroughly. Add to a pot with water and bring to a boil, then reduce to low and simmer for 15 minutes. Let it rest for 10 minutes.
  • Stir in sugar, salt, coconut milk, and vanilla into warm rice. Mix well and allow to cool to room temperature.
  • Slice fruits into thin strips or bite-sized pieces. Prepare rice paper or soy sheets on a damp surface.
  • Spread a layer of sweet rice onto the wrapper. Arrange fruits in the center and roll tightly.
  • Slice rolls with a damp knife. Top with optional ingredients such as coconut, honey, or chocolate.
  • Optional: Chill for 10–15 minutes for a firmer texture before serving.

Notes

Great for kids and customizable with any fruit. Use a sharp knife and damp hands for easier handling. For a lower-carb version, try using quinoa instead of rice.
