Ingredients
  

Main Ingredients

  • 2 large eggs
  • 1 large tortilla flour for a soft texture, corn for a traditional crunch
  • ½ cup shredded cheese cheddar, Monterey Jack, or a mix
  • 1 tbsp butter or olive oil

Optional Toppings

  • chopped cilantro
  • hot sauce
  • salsa or avocado

Instructions
 

  • Heat a non-stick skillet over medium heat and add butter or olive oil.
  • Crack the eggs into the pan and let them cook slightly, keeping the yolks soft if you prefer a runny center.
  • Place the tortilla directly over the eggs, pressing gently so the eggs stick to it. Let it cook for 30–40 seconds.
  • Using a spatula, carefully flip the tortilla so the egg side is now facing up.
  • Sprinkle shredded cheese evenly over one half of the tortilla.
  • Fold the tortilla in half, pressing lightly. Cook until both sides are golden brown and crispy.
  • Slice into triangles and serve with salsa or sour cream.

Notes

For extra flavor, try adding sautéed mushrooms, turkey bacon, or a spicy kick with jalapeños!
