large eggs

large tortilla
flour for a soft texture, corn for a traditional crunch
½
cup
shredded cheese
cheddar, Monterey Jack, or a mix

tbsp
butter or olive oil
Optional Toppings
chopped cilantro
hot sauce
salsa or avocado
Instructions
Heat a non-stick skillet over medium heat and add butter or olive oil.
Crack the eggs into the pan and let them cook slightly, keeping the yolks soft if you prefer a runny center.
Place the tortilla directly over the eggs, pressing gently so the eggs stick to it. Let it cook for 30–40 seconds.
Using a spatula, carefully flip the tortilla so the egg side is now facing up.
Sprinkle shredded cheese evenly over one half of the tortilla.
Fold the tortilla in half, pressing lightly. Cook until both sides are golden brown and crispy.
Slice into triangles and serve with salsa or sour cream.
Notes
For extra flavor, try adding sautéed mushrooms, turkey bacon, or a spicy kick with jalapeños!
