Instructions
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, mix the milk, egg, and vanilla extract.
Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix.
Fold in the cooked crumbled sausage.
Heat a lightly greased skillet or griddle over medium heat.
Pour 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface and the edges look dry (about 2–3 minutes). Flip and cook for another 2 minutes until golden brown.
Serve warm with maple syrup, butter, or your favorite toppings.
