Instructions
Preheat oven to 350°F (175°C) and grease a muffin tin with olive oil or butter.
In a bowl, whisk together eggs, milk, shredded cheese, salt, and pepper.
Evenly distribute diced vegetables and cooked meat (if using) into the muffin cups.
Pour the egg mixture over the fillings, filling each muffin cup about ¾ full.
Bake for 18–20 minutes or until the eggs are set and slightly golden.
Let cool for 5 minutes, then remove from the tin and enjoy!
