Ingredients
  

Egg Mixture

  • 6 large eggs
  • 0.5 cup milk or dairy-free alternative
  • 0.5 cup shredded cheese cheddar, feta, or Swiss
  • 0.5 cup diced vegetables bell peppers, spinach, mushrooms
  • 0.5 cup cooked chicken or turkey sausage optional, for extra protein
  • salt & pepper to taste
  • 1 tbsp olive oil or butter for greasing the muffin tin

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a muffin tin with olive oil or butter.
  • In a bowl, whisk together eggs, milk, shredded cheese, salt, and pepper.
  • Evenly distribute diced vegetables and cooked meat (if using) into the muffin cups.
  • Pour the egg mixture over the fillings, filling each muffin cup about ¾ full.
  • Bake for 18–20 minutes or until the eggs are set and slightly golden.
  • Let cool for 5 minutes, then remove from the tin and enjoy!

Notes

Customize with your favorite ingredients! Try adding jalapeños for spice, swapping milk for coconut milk for a dairy-free option, or using different cheeses for variety.
