  • 2 cups complete pancake mix just-add-water variety
  • 1.33 cups water add more as needed for texture
  • 3 tbsp butter divided
  • 8 slices halal beef or turkey bacon cooked until crispy
  • maple syrup or honey for dipping (optional)

Instructions
 

  • Make the batter: In a bowl, stir together pancake mix and water until combined but still lumpy.
  • Preheat a non-stick skillet over medium heat and melt 1.5 tbsp of butter.
  • Dip each cooked bacon strip into the batter to coat evenly, then lay flat in the skillet.
  • Cook each side for 2–3 minutes until golden brown and puffed.
  • Repeat with remaining butter and ingredients. Serve warm with maple syrup or honey.

Notes

For extra flavor, try mixing cinnamon or nutmeg into the batter. Make ahead and freeze in layers for quick weekday breakfasts—just reheat in a toaster oven.
