Instructions
In a bowl, mix paprika, garlic powder, salt, black pepper, and panko breadcrumbs.
Dip chicken breasts into beaten egg, then coat with the breadcrumb mixture.
Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown and fully cooked.
Remove from heat and let the chicken rest before slicing.
In a small bowl, mix Greek yogurt, chopped mint, and lemon juice to prepare the mint sauce.
Assemble the rice bowls by placing cooked brown rice at the base, then adding steamed broccoli and carrots.
Top with sliced crispy chicken and drizzle with soy sauce. Serve with mint sauce on the side.
Notes
For extra flavor, try adding a sprinkle of sesame seeds or a dash of sriracha on top.
