Ingredients
  

Crispy Chicken

  • 2 large chicken breasts boneless, skinless
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 large egg beaten
  • 2 tbsp olive oil

Rice Bowl

  • 2 cups cooked brown rice
  • 1 cup steamed broccoli
  • 1 cup steamed carrots sliced
  • ¼ cup low-sodium soy sauce

Mint Sauce

  • ½ cup Greek yogurt
  • 2 tbsp fresh mint chopped
  • 1 tbsp lemon juice

Instructions
 

  • In a bowl, mix paprika, garlic powder, salt, black pepper, and panko breadcrumbs.
  • Dip chicken breasts into beaten egg, then coat with the breadcrumb mixture.
  • Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown and fully cooked.
  • Remove from heat and let the chicken rest before slicing.
  • In a small bowl, mix Greek yogurt, chopped mint, and lemon juice to prepare the mint sauce.
  • Assemble the rice bowls by placing cooked brown rice at the base, then adding steamed broccoli and carrots.
  • Top with sliced crispy chicken and drizzle with soy sauce. Serve with mint sauce on the side.

Notes

For extra flavor, try adding a sprinkle of sesame seeds or a dash of sriracha on top.
