Ingredients
  

Base

  • 1.5 cups Moroccan couscous
  • 1.5 cups boiling water
  • 2 tbsp olive oil

Vegetables & Spices

  • 1 small onion chopped
  • 2 carrots sliced thin
  • 1 zucchini chopped
  • 1 tomato diced
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 0.5 tsp ground cinnamon
  • salt and pepper to taste
  • fresh parsley or cilantro chopped, for garnish

Optional Add-ins

  • chickpeas, raisins, or preserved lemon

Instructions
 

  • Heat olive oil in a pan and sauté chopped onion until golden.
  • Add carrots, zucchini, and tomato. Cook for 5–7 minutes. Stir in cumin, turmeric, and cinnamon.
  • Season with salt and pepper. Optionally add raisins for sweetness.
  • Place couscous in a bowl, pour boiling water over it, cover, and let sit for 5 minutes.
  • Fluff couscous with a fork and combine with sautéed vegetables. Garnish with herbs and serve.

Notes

Add protein like chickpeas or grilled chicken. For traditional texture, steam couscous instead of soaking. Flavor can be enhanced with harissa, chermoula, or preserved lemon.
