Preheat the oven to 375°F (190°C).
Boil the lasagna noodles according to package instructions. Drain and set aside.
In a skillet, cook the ground beef or turkey over medium heat until browned. Add minced garlic, Italian seasoning, salt, and pepper. Stir in marinara sauce and let simmer for 5 minutes.
In a mixing bowl, combine cottage cheese, chopped spinach, and half of the Parmesan cheese. Stir well.
Spread a thin layer of marinara sauce at the bottom of a baking dish.
Layer 3 lasagna noodles, followed by the cottage cheese mixture, meat sauce, and shredded mozzarella. Repeat the layering process until all ingredients are used, finishing with mozzarella and the remaining Parmesan on top.
Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
Let the lasagna rest for 10 minutes before slicing. Enjoy with a side of garlic bread or a simple green salad!
Notes
For a vegetarian version, replace ground beef with sautéed mushrooms or cooked lentils. For extra creaminess, blend the cottage cheese before mixing with other ingredients.
