Instructions
Pat the cod fillets dry and season both sides with salt, pepper, and paprika. Let them sit for 10 minutes.
Set up a breading station with three bowls: one with flour, one with beaten eggs mixed with sparkling water, and one with panko breadcrumbs.
Coat each fillet in flour, then dip in the egg mixture, and finally press into the panko until fully covered.
