In a small bowl, whisk together soy sauce, mirin, honey (or brown sugar), garlic, and ginger to make the teriyaki sauce.
Heat a nonstick pan or skillet over medium-high heat. Add sesame oil and let it heat up.
Place the chicken thighs (or breasts) in the pan and sear for 4-5 minutes on each side until golden brown and fully cooked.
