  • 2 slices thick-cut bread brioche, sourdough, or whole-grain
  • 2 large eggs
  • 0.5 cup shredded cheddar or mozzarella cheese
  • 1 tbsp butter or olive oil
  • salt and pepper to taste
  • chili flakes, green onions, or za’atar optional toppings

Instructions
 

  • Heat a skillet over medium and add butter or oil.
  • Place the bread slices in the skillet. Press the center of each with a spoon to create a slight well.
  • Crack an egg into the center of each slice. Sprinkle cheese around the egg and onto the toast.
  • Cover the pan with a lid and cook for 5–7 minutes until the egg whites set and the cheese melts.
  • Season with salt, pepper, and any desired toppings. Serve warm.
