  • 4 boneless, skinless chicken breasts
  • 3 bell peppers red, yellow, and green, sliced into strips
  • 1 large red onion sliced
  • 2 tablespoons fajita seasoning
  • 2 tablespoons olive oil
  • 1 ½ cups shredded Mexican cheese blend
  • 1 lime juiced
  • 1 teaspoon garlic powder
  • fresh cilantro optional, for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
  • Rub the chicken breasts with fajita seasoning, garlic powder, and lime juice. Set aside to marinate for 10–15 minutes while prepping other ingredients.
  • Arrange sliced bell peppers and onions in the baking dish. Drizzle with olive oil, tossing to coat evenly. Lay the chicken breasts on top.
  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil, sprinkle the shredded cheese over the chicken, and bake for another 10 minutes until the cheese is melted and bubbly.
  • Let the dish rest for 5 minutes before serving. Garnish with fresh cilantro and enjoy with rice, tortillas, or a side salad.

Notes

For a low-carb version, serve over cauliflower rice. Add jalapeños for extra spice!
