Instructions
Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
Rub the chicken breasts with fajita seasoning, garlic powder, and lime juice. Set aside to marinate for 10–15 minutes while prepping other ingredients.
Arrange sliced bell peppers and onions in the baking dish. Drizzle with olive oil, tossing to coat evenly. Lay the chicken breasts on top.
Cover the dish with foil and bake for 20 minutes.
Remove the foil, sprinkle the shredded cheese over the chicken, and bake for another 10 minutes until the cheese is melted and bubbly.
Let the dish rest for 5 minutes before serving. Garnish with fresh cilantro and enjoy with rice, tortillas, or a side salad.
Notes
For a low-carb version, serve over cauliflower rice. Add jalapeños for extra spice!
