Ingredients
  

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • ¼ cup cornstarch for extra crispiness
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup sugar

Wet Ingredients

  • 1 ¼ cups buttermilk
  • 2 large eggs
  • ½ cup unsalted butter melted
  • 1 tsp vanilla extract

Instructions
 

  • In a large mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, salt, and sugar.
  • In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  • Slowly pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; a few lumps are fine.
  • Preheat the waffle maker and lightly grease it with butter or non-stick spray.
  • Pour about ½ to ¾ cup of batter into the waffle maker and cook for 4–5 minutes, or until golden brown and crispy.
  • Repeat with the remaining batter, keeping cooked waffles warm in a 200°F (93°C) oven if needed.
  • Serve immediately with maple syrup, fresh fruit, or your favorite toppings.

Notes

For extra crispy waffles, let the batter rest for 10 minutes before cooking. To store, freeze in a single layer, then reheat in a toaster or oven at 350°F (175°C) for 5–7 minutes.
