Burrito Ingredients

  • 4 flour tortillas whole wheat or low-carb options work too
  • 4 large eggs scrambled
  • ½ cup shredded cheese cheddar, pepper jack, or mozzarella
  • ½ cup cooked halal turkey sausage or shredded chicken or use black beans for a vegetarian option
  • ½ cup diced bell peppers and onions
  • ½ tsp cumin
  • ½ tsp paprika
  • salt and black pepper to taste
  • ½ avocado sliced (optional but highly recommended)
  • ¼ cup salsa or hot sauce for extra flavor

Instructions
 

  • Cook the Protein – If using turkey sausage or chicken, cook it in a pan over medium heat until golden brown. Remove and set aside.
  • Sauté the Veggies – In the same pan, sauté diced onions and bell peppers for about 3 minutes until softened.
  • Scramble the Eggs – In a bowl, whisk the eggs with cumin, paprika, salt, and black pepper. Cook them in a nonstick pan until soft and fluffy.
  • Assemble the Burrito – Warm the tortillas and start layering: eggs, protein, cheese, sautéed veggies, and avocado. Drizzle with salsa or hot sauce.
  • Wrap and Toast – Fold the sides, roll tightly, and toast on a dry pan for 2 minutes per side until golden brown.
  • Serve and Enjoy! – Cut in half and dig in while it’s warm.

Notes

Want to meal prep? Wrap your burritos in foil and freeze them. When ready to eat, microwave for 2 minutes or reheat in an oven at 350°F for 10 minutes.
